Enterokinase is an intestinal juice enzyme.
When they enter the duodenum it activates the proteolytic enzymes in pancreatic juice

Bile secretion always help in splitting of fat molecule called micelles therefore it occur in fat
since pancreas secrete only pancreactic juice which are only in inactive form, whenever it goes in intestine then enterokinase is secreted from duodonum and trypsin get activated
Bile is used for emulsification of fats therefore it secretion takes according to proportion of fat content .
